Ingredients

The following ingredients have 4 Servings
  • 1 lb ground chicken
  • 1 teaspoon gluten-free soy sauce
  • 1 tablespoon fish sauce
  • Juice of 1 whole lime
  • 2 tablespoons peanut butter
  • 2 cup cooked quinoa
  • broccoli slaw
  • crushed peanuts
  • lime zest

Instruction

  • Preheat the oven to 400 degrees F.
  • Whisk together soy sauce, fish sauce, lime juice, peanut butter and ginger and sriracha (if using).
  • Add ground chicken to a mixing bowl, add sauce and quinoa and mix until incorporated.
  • Form into four patties and set aside on a plate.
  • Preheat an oven-safe skillet over medium-high heat. Add burgers and sear on both sides, 1 - 2 mins per side. Transfer skillet to oven and bake until fully cooked, another 7 - 10 minutes.
  • Remove from oven and let rest for 5 minutes before serving.
  • Top with slaw, peanuts and lime zest and enjoy!
