Ingredients
The following ingredients have 4 Servings
- 1 lb ground chicken
- 1 teaspoon gluten-free soy sauce
- 1 tablespoon fish sauce
- Juice of 1 whole lime
- 2 tablespoons peanut butter
- 2 cup cooked quinoa
- broccoli slaw
- crushed peanuts
- lime zest
Instruction
- Preheat the oven to 400 degrees F.
- Whisk together soy sauce, fish sauce, lime juice, peanut butter and ginger and sriracha (if using).
- Add ground chicken to a mixing bowl, add sauce and quinoa and mix until incorporated.
- Form into four patties and set aside on a plate.
- Preheat an oven-safe skillet over medium-high heat. Add burgers and sear on both sides, 1 - 2 mins per side. Transfer skillet to oven and bake until fully cooked, another 7 - 10 minutes.
- Remove from oven and let rest for 5 minutes before serving.
- Top with slaw, peanuts and lime zest and enjoy!
