Ingredients

The following ingredients have 4 Servings
  • 1 1/2` cup cooked orzo
  • 2-3 cup rotisserie chicken (chopped)
  • 1 cup arugula
  • 1/2 cup red bell pepper (chopped)
  • 1/4 cup red onion (diced)
  • 1 cup English cucumber (chopped)
  • 1/4 cup white vinegar
  • 1/2 tsp Dijon mustard
  • 2 tbsp lemon juice
  • 1/8 tsp salt
  • 1/8 tsp pepper

Instruction

  • Cook pasta according to package. Drain.
  • Combine pasta, chicken, pepper, cucumber, onion, arugula and tomatoes.
  • In a small bowl combine vinegar, oil, mustard, lemon juice, salt and pepper. Stir with a whisk.
  • Pour vinaigrette over salad and toss to coat.
