Ingredients
The following ingredients have 4 Servings
- 1 1/2` cup cooked orzo
- 2-3 cup rotisserie chicken (chopped)
- 1 cup arugula
- 1/2 cup red bell pepper (chopped)
- 1/4 cup red onion (diced)
- 1 cup English cucumber (chopped)
- 1/4 cup white vinegar
- 1/2 tsp Dijon mustard
- 2 tbsp lemon juice
- 1/8 tsp salt
- 1/8 tsp pepper
Instruction
- Cook pasta according to package. Drain.
- Combine pasta, chicken, pepper, cucumber, onion, arugula and tomatoes.
- In a small bowl combine vinegar, oil, mustard, lemon juice, salt and pepper. Stir with a whisk.
- Pour vinaigrette over salad and toss to coat.
