Ingredients

The following ingredients have 4 Servings
  • 2 Tbsps olive oil
  • 2 Chicken breasts (skinned and diced)
  • 1 red Bell pepper (deseeded and sliced)
  • 1.333 cups canned button Mushroom (sliced)
  • 0.667 cup frozen peas (thawed)
  • 1 onion (sliced)
  • 1 cup grated Cheese
  • 1 pinch Curry powder
  • 2 Ciabatta (split horizontally)

Instruction

  • Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
  • Heat the oil in a pan and quickly fry the chicken until lightly browned.
  • Stir in the bell pepper, mushrooms, peas, onion, cheese and curry powder, season with salt and pepper and pile the mixture onto the sliced ciabattas.
  • Bake in the oven for 10 -15 minutes.
