Ingredients
The following ingredients have 4 Servings
- 2 Tbsps olive oil
- 2 Chicken breasts (skinned and diced)
- 1 red Bell pepper (deseeded and sliced)
- 1.333 cups canned button Mushroom (sliced)
- 0.667 cup frozen peas (thawed)
- 1 onion (sliced)
- 1 cup grated Cheese
- 1 pinch Curry powder
- 2 Ciabatta (split horizontally)
Instruction
- Heat the oven to 200ºC (180º fan) 400ºF, gas 6.
- Heat the oil in a pan and quickly fry the chicken until lightly browned.
- Stir in the bell pepper, mushrooms, peas, onion, cheese and curry powder, season with salt and pepper and pile the mixture onto the sliced ciabattas.
- Bake in the oven for 10 -15 minutes.
