Ingredients
The following ingredients have 4 Servings
- 2 tbsp oil
- 6 oz spinach
- 1 lrg red onion
- 2 tsp garlic diced
- 8 Tbsp butter softened
- 10 slices artisan bread (any flavor you like)
- 1 rotisserie chicken breast (or sauteed chicken breast ripped up)
- 5 slices mozzerella cheese
- 6 oz crumbled feta
- 2 oz crumbled goat cheese
- 1 tomato diced
- 1.5 oz Kalamata olives chopped
Instruction
- In a saute pan heat up the oil
- cook the red onion, after a few mins add the spinach, and when it starts to shrink add the garlic and cook until translucent
- Heat up your pan or skillet to medium
- butter one side of each slice of bread
- with the butter side out - layer the mozzerella, chicken, spinach/onion mixture, olives, tomatoes and then the goat and feta cheeses, top with another slice of bread (butter side out)
- cook each side until golden brown, slice and serve!
