Ingredients

The following ingredients have 4 Servings
  • 2 tbsp oil
  • 6 oz spinach
  • 1 lrg red onion
  • 2 tsp garlic diced
  • 8 Tbsp butter softened
  • 10 slices artisan bread (any flavor you like)
  • 1 rotisserie chicken breast (or sauteed chicken breast ripped up)
  • 5 slices mozzerella cheese
  • 6 oz crumbled feta
  • 2 oz crumbled goat cheese
  • 1 tomato diced
  • 1.5 oz Kalamata olives chopped

Instruction

  • In a saute pan heat up the oil
  • cook the red onion, after a few mins add the spinach, and when it starts to shrink add the garlic and cook until translucent
  • Heat up your pan or skillet to medium
  • butter one side of each slice of bread
  • with the butter side out - layer the mozzerella, chicken, spinach/onion mixture, olives, tomatoes and then the goat and feta cheeses, top with another slice of bread (butter side out)
  • cook each side until golden brown, slice and serve!
