Ingredients

The following ingredients have 4 Servings
  • ½ cup soy sauce
  • 4 tbsp rice vinegar
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp chili paste
  • 4 cloves fresh garlic (crushed)
  • 2 tsp freshly grated ginger
  • 2 tsp sesame oil (divided)
  • 1 lb boneless, skinless chicken breasts (sliced)
  • 10 oz Lo Mein Noodles (or Spaghetti Noodles, if Lo Mein can’t be found)
  • ½ cup red bell pepper (sliced)
  • ½ cup onion (sliced)
  • 1 cup sugar snap peas
  • 1 cup shiitake mushrooms (sliced)

Instruction

  • In a large bowl, combine the soy sauce, rice vinegar, sriracha, honey, chili paste, garlic, ginger and 1 tsp sesame oil.
  • Place the sliced chicken in a large bowl, pour half of the sauce over the chicken and toss to coat.
  • Bring a large pot of water to boil on the stove.
  • Add the chow mein noodles to the pot of water and cook according to package directions.
  • Drain and set aside.
  • Heat a large skillet or wok on the stove over high heat.
  • Add the remaining 1 tsp sesame oil to the skillet.
  • Once hot, add the bell pepper, onion, snap peas and mushrooms, cook for 2-3 minutes, then add the chicken and cook for an additional 4-5 minutes.
  • Add the noodles and the remaining sauce to the skillet.
  • Toss and simmer for 3-4 minutes.
