Ingredients
The following ingredients have 4 Servings
- ½ cup soy sauce
- 4 tbsp rice vinegar
- 2 tbsp sriracha
- 1 tbsp honey
- 1 tbsp chili paste
- 4 cloves fresh garlic (crushed)
- 2 tsp freshly grated ginger
- 2 tsp sesame oil (divided)
- 1 lb boneless, skinless chicken breasts (sliced)
- 10 oz Lo Mein Noodles (or Spaghetti Noodles, if Lo Mein can’t be found)
- ½ cup red bell pepper (sliced)
- ½ cup onion (sliced)
- 1 cup sugar snap peas
- 1 cup shiitake mushrooms (sliced)
Instruction
- In a large bowl, combine the soy sauce, rice vinegar, sriracha, honey, chili paste, garlic, ginger and 1 tsp sesame oil.
- Place the sliced chicken in a large bowl, pour half of the sauce over the chicken and toss to coat.
- Bring a large pot of water to boil on the stove.
- Add the chow mein noodles to the pot of water and cook according to package directions.
- Drain and set aside.
- Heat a large skillet or wok on the stove over high heat.
- Add the remaining 1 tsp sesame oil to the skillet.
- Once hot, add the bell pepper, onion, snap peas and mushrooms, cook for 2-3 minutes, then add the chicken and cook for an additional 4-5 minutes.
- Add the noodles and the remaining sauce to the skillet.
- Toss and simmer for 3-4 minutes.
