Ingredients

The following ingredients have 6 Servings
  • 2 Lbs Boneless Skinless Chicken Thighs
  • 1/4 Cup Greek Yogurt - plain non-fat
  • 1/2 Whole Lemon (squeezed)
  • 1 Tsp Smoked Paprika
  • 1 Tsp Ground Coriander
  • 1/2 Tsp Ground Cinnamon
  • 1/2 Tsp White Pepper
  • 2 Tsp Garlic Paste
  • 2 Tsp Ginger Paste
  • 1/2 Tsp Salt
  • 2 Tsp Corn Oil
  • 2 Whole White Onions (chopped)
  • 2 Tsp Fresh Ginger (minced)
  • 1 Whole Jalapeno (diced)
  • 1/2 Tsp White Pepper
  • 1 Tbsp Ground Coriander
  • 1/2 Tsp Garam Masala
  • 1/4 Tsp Light Brown Sugar
  • 1/4 Tsp Salt
  • 1/2 Cup Coconut Milk
  • 1 Cup Packed Fresh Cilantro
  • 10 Leaves Mint
  • 1 Whole Jalapeno (diced)
  • 1 Whole Lime (squeezed)
  • 1 Tbsp Corn Oil
  • 2 Tbsp Coconut Milk

Instruction

  • Combine all the marinade ingredients and cover chicken.  Let marinate for 2 hours.  Bake in a 400 degree oven for 20 minutes turning halfway through the baking.  Set aside.
