Ingredients
The following ingredients have 4 Servings
- 2 teaspoons minced ginger
- 2 teaspoon minced garlic
- 1 teaspoon coconut oil
- 5 cups chicken broth
- 1 teaspoon fish sauce
- 2-3 teaspoon gluten-free tamari
- 1/8 teaspoon salt
- 1 cup shredded chicken
- 16 oz 2 cups kimchi, cut in half
- 2 tablespoons reserved kimchi liquid
- 1 lime (zest and juice)
- 4 scallions (thinly sliced)
Instruction
- Heat oil in a pot over medium heat and cook ginger and garlic until aromatic (1-2 minutes).
- Add chicken broth, fish sauce, salt and gluten free tamari. Bring to a boil.
- Add chicken, kimchi and kimchi liquid. Bring to a boil, reduce heat to low and simmer for 10 minutes.
- Serve garnished with lime zest, juice and scallions.
