Ingredients

The following ingredients have 4 Servings
  • 2 teaspoons minced ginger
  • 2 teaspoon minced garlic
  • 1 teaspoon coconut oil
  • 5 cups chicken broth
  • 1 teaspoon fish sauce
  • 2-3 teaspoon gluten-free tamari
  • 1/8 teaspoon salt
  • 1 cup shredded chicken
  • 16 oz 2 cups kimchi, cut in half
  • 2 tablespoons reserved kimchi liquid
  • 1 lime (zest and juice)
  • 4 scallions (thinly sliced)

Instruction

  • Heat oil in a pot over medium heat and cook ginger and garlic until aromatic (1-2 minutes).
  • Add chicken broth, fish sauce, salt and gluten free tamari. Bring to a boil.
  • Add chicken, kimchi and kimchi liquid. Bring to a boil, reduce heat to low and simmer for 10 minutes.
  • Serve garnished with lime zest, juice and scallions.
