Ingredients

The following ingredients have 4 Servings
  • 1 1/2 kg chicken thighs
  • 1/4 cup plain flour
  • 2 bacon rashers finely chopped
  • 1 green capsicum diced
  • 1 onion finely chopped
  • 425g canned whole tomatoes peeled
  • 2 tbs tomato paste
  • 2 chicken stock cubes
  • 1 tbs soy sauce
  • 1/2 tsp salt and pepper
  • 200g mushrooms

Instruction

  • Coat chicken thighs in flour.
  • Combine all ingredients, except for mushrooms, in a 3 Litre casserole dish.
  • Cover and cook for 27-30 minutes on medium-high. Stir 2-3 times during cooking.
  • Add mushrooms, then cook uncovered, for a further 5-7 minutes.
