Ingredients
The following ingredients have 6 Servings
- 2 lbs. chicken thigh (cut into serving pieces)
- 1 1/2 cup frozen green peas
- 1 14 oz. can diced tomatoes
- 1 1/2 cup chicken stock or broth
- 1 medium roasted red bell pepper (capsicum, sliced)
- 1 medium yellow onion (diced)
- 4 cloves garlic (crushed)
- 3 tablespoons cooking oil
- Salt and pepper to taste
Instruction
- Heat the cooking oil in a cooking pot.
- Saute the garlic and onion.
- Once the onion becomes soft, add the chicken slices. Cook each side of the chicken until it turns light brown (around 2 minutes). Make sure to turn the chicken over to cook the other side.
- Add the diced tomatoes and chicken broth. Stir and let boil. Cover and simmer for 30 to 40 minutes.
- Add the green peas. Stir and cook for 3 minutes.
- Put-in the red bell pepper. Stir and cook for another 3 minutes.
- Add salt and pepper to taste.
