Ingredients

The following ingredients have 4 Servings
  • 4 potato medium
  • 2 tbs oil
  • 4 cloves garlic crushed
  • 1 onion chopped small
  • 8 mushrooms sliced
  • 1 kg (fillets) chicken thighs chopped
  • 50 g butter
  • 2 cup tasty cheese grated
  • 300 ml sour cream
  • 1 tbs parsley chopped
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup dried breadcrumbs
  • 1/2 tsp paprika

Instruction

  • Place potatoes into saucepan of water, bring to boil, reduce heat, cover and cook approximately 30 minutes, until tender.
  • Drain, allow to cool, peel and discard skins.
  • Cut into cubes.
  • Set aside or refrigerate until needed.
  • Heat oil, add garlic and onion, saute for approximately 2 minutes.
  • Add mushrooms, saute, then set aside.
  • Add chicken in batches until cooked.
  • Return onion, garlic, mushrooms to pan.
  • Add butter, combine until melted.
  • Add potatoes, cheese, sour cream, salt and pepper. Mix well.
  • Spoon mixture into a baking tray or casserole dish.
  • Sprinkle with breadcrumbs and paprika.
  • Bake at 180C for 30 minutes, or until heated through and browned on top.
