Ingredients
The following ingredients have 4 Servings
- 4 potato medium
- 2 tbs oil
- 4 cloves garlic crushed
- 1 onion chopped small
- 8 mushrooms sliced
- 1 kg (fillets) chicken thighs chopped
- 50 g butter
- 2 cup tasty cheese grated
- 300 ml sour cream
- 1 tbs parsley chopped
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 cup dried breadcrumbs
- 1/2 tsp paprika
Instruction
- Place potatoes into saucepan of water, bring to boil, reduce heat, cover and cook approximately 30 minutes, until tender.
- Drain, allow to cool, peel and discard skins.
- Cut into cubes.
- Set aside or refrigerate until needed.
- Heat oil, add garlic and onion, saute for approximately 2 minutes.
- Add mushrooms, saute, then set aside.
- Add chicken in batches until cooked.
- Return onion, garlic, mushrooms to pan.
- Add butter, combine until melted.
- Add potatoes, cheese, sour cream, salt and pepper. Mix well.
- Spoon mixture into a baking tray or casserole dish.
- Sprinkle with breadcrumbs and paprika.
- Bake at 180C for 30 minutes, or until heated through and browned on top.
