Ingredients

The following ingredients have 4 Servings
  • 4 Chicken Breasts (cut into strips)
  • 120 g Wholemeal Bread (or gluten free roll)
  • 2 medium Eggs
  • 3 tsp Garlic Granules
  • 1 Lemon
  • 1/2 tsp Freshly Ground Black Pepper
  • Sea Salt
  • 1/4 tsp Mustard Powder
  • 1 small handful Fresh Parsley
  • Low Calorie Cooking Spray

Instruction

  • Pre-heat oven to 180ºC, line 2 large baking sheets with greaseproof paper and lightly spray with Frylight.
  • Break the bread into pieces and place into a mini chopper, along with the parsley, garlic, salt, pepper, mustard powder and the finely grated rind of the lemon.
  • Beat the eggs and place into a shallow dish. Place the breadcrumb mix into a separate dish.
  • Cut each chicken breast into strips (they should be around 1.5cm thick each). Dip each piece into the egg and then pop into the breadcrumb mix to lightly coat.
  • Once coated, place each piece onto the baking tray. Squeeze over the juice of the lemon.
  • Spray the chicken with low calorie cooking spray and place into the oven for around 25 minutes until golden brown and cooked through. Serve with your choice of accompaniment!
