- 1 tablespoon apple cider vinegar
- 9 cups water
- 3 medium carrots, sliced
- 3 stalks celery, sliced
- 1 large onion, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 5 cloves garlic, finely chopped
- 0-2 jalapenos, chopped ((none for classic chicken soup flavor, 1-2 if you like things spicy hot))
- salt and pepper, to taste
- 12 ounces cooked chicken breast meat, chopped
- ½ cup dry barley ((hulled, not pearled))
- 4 tablespoons fresh parsley, chopped
