Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon salted butter
  • 1 6-ounce boneless skinless chicken breast (, cut into 1/2-inch strips)
  • 1/4 teaspoon kosher salt (, divided)
  • 1/4 teaspoon coarsely ground black pepper (, divided)
  • 1/2 tablespoon olive oil
  • 1/2 small onion (, peeled and thinly sliced)
  • 1/2 small red or green bell pepper (, seeded and cut into thin strips)
  • 2 8-inch flour tortillas

Instruction

  • In a 10-inch skillet over medium-high heat, melt butter 30 seconds.
  • Sprinkle all sides of chicken pieces with 1/8 teaspoon salt and 1/8 teaspoon pepper. Place seasoned chicken in skillet and cook 6 minutes until all pieces are completely cooked through. Transfer to a medium plate, cover, and set aside.
  • Add olive oil to the skillet. Add onions, peppers, and the remaining salt and pepper and cook, stirring frequently, 5 minutes until vegetables have softened.
  • Return chicken to the pan and stir until heated through, about 1 minute, then spoon mixture onto tortillas. Enjoy immediately.
