Ingredients

The following ingredients have 4 Servings
  • 1 1/2 pounds boneless, skinless chicken breast
  • 5 1/2 teaspoons fajita seasoning
  • 2 1/2 tablespoons neutral oil
  • 2 limes, juiced
  • 1 red bell pepper, seeded and thinly sliced
  • 1 yellow bell pepper, seeded and thinly sliced
  • 1/2 yellow onion, thinly sliced
  • 1 minced garlic clove
  • salt and pepper to taste

Instruction

  • Sliced chicken breasts into 1/4" thick pieces, crosswise.
  • Transfer chicken to a large bowl and top with fajita seasoning, 1/2 tablespoon oil and juice of 1 lime.
  • Toss together until chicken is completely and evenly coated. Allow mixture to sit for 30 minutes
  • Place a large sauté pan over medium-high heat. Add 1 tablespoon oil and chicken and sauté until chicken has just cooked through, 3 to 4 minutes. (Do this in batches to prevent chicken from steaming)
  • Transfer chicken to a large plate and set aside.
  • Place pan back over heat and add remaining oil. Add bell peppers and onions and sauté for 3 to 4 minutes or until vegetables char around the edges and begin to soften. Add garlic and continue to sauté for 1 minute.
  • Add chicken back to pan, top with remaining lime juice, lightly season with salt and pepper and toss together.
  • Remove mixture from heat and serve (with flour tortillas and whatever toppings you want!).
