Ingredients
The following ingredients have 4 Servings
- 1 1/2 pounds boneless, skinless chicken breast
- 5 1/2 teaspoons fajita seasoning
- 2 1/2 tablespoons neutral oil
- 2 limes, juiced
- 1 red bell pepper, seeded and thinly sliced
- 1 yellow bell pepper, seeded and thinly sliced
- 1/2 yellow onion, thinly sliced
- 1 minced garlic clove
- salt and pepper to taste
Instruction
- Sliced chicken breasts into 1/4" thick pieces, crosswise.
- Transfer chicken to a large bowl and top with fajita seasoning, 1/2 tablespoon oil and juice of 1 lime.
- Toss together until chicken is completely and evenly coated. Allow mixture to sit for 30 minutes
- Place a large sauté pan over medium-high heat. Add 1 tablespoon oil and chicken and sauté until chicken has just cooked through, 3 to 4 minutes. (Do this in batches to prevent chicken from steaming)
- Transfer chicken to a large plate and set aside.
- Place pan back over heat and add remaining oil. Add bell peppers and onions and sauté for 3 to 4 minutes or until vegetables char around the edges and begin to soften. Add garlic and continue to sauté for 1 minute.
- Add chicken back to pan, top with remaining lime juice, lightly season with salt and pepper and toss together.
- Remove mixture from heat and serve (with flour tortillas and whatever toppings you want!).
