Ingredients

The following ingredients have 4 Servings
  • 1 T vegetable oil
  • 1 T butter
  • 1 lb chicken tenders
  • 2 T fajita seasoning
  • 2 C chopped peppers (any combination of red (green, yellow and/or red))
  • 1 C sliced red onion
  • 12 oz bagged salad
  • 1 avocado (sliced or diced)
  • 1 lime cut into wedges
  • 2 T freshly chopped cilantro
  • Optional: crushed tortilla chips

Instruction

  • Cut chicken into bite sized pieces and place in a bowl. Toss chicken with fajita seasoning.
  • In a large non-stick skillet over medium/high heat melt the butter with the oil. Add the seasoned chicken to the pan, being careful not to overcrowd (if needed cook chicken in batches). After 4 minutes, stir chicken and continue to cook another 4-5 minutes until browned and cooked thru. Remove chicken from pan and set aside on a plate.
  • Return pan back to heat. If pan is dry, add 1 tsp more of oil. Add onion and peppers to pan and cook just until tender crisp, about 3-4 minutes.
  • Place lettuce in a large bowl or platter. Top with vegetables, avocado, chicken and cilantro. Toss to combine and serve with lime wedges.
  • Squeeze lime wedge over salad just before serving. Add tortilla chips for garnish if desired.
