Ingredients
The following ingredients have 4 Servings
- 1 pound lean ground chicken
- 1/4 teaspoon salt
- 1 jalapeno (seeds removed and very finely diced ** (See notes))
- 4 ounces shredded pepperjack cheese
- 1 Tablespoon grapeseed or olive oil
- 1 red bell pepper (cored, seeds removed, and sliced into thin strips)
- 1 green bell pepper (cored, seeds removed, and sliced into thin strips)
- 1 large yellow or white onion (peeled and cut into thin slices)
- 4 hamburger buns or rolls
Instruction
- In a medium bowl, use your hands to combine ground chicken, salt, and jalapeno. Form 8 equal sized patties, each weighing 2 ounces (roughly 1/4 cup each). Place shredded cheese on top of one patty and top it with another patty. Use your fingers to seal the edges of the patties together.
- Place burgers at least 1 inch apart onto the preheated grate of a hot grill, or into a grill pan that's been preheated over high heat for at least 3 minutes.
- If you're using a grill pan, immediately reduce heat to medium-high. Cook burgers on one side for 4 minutes, then flip and cook on other side for an additional 4-6 minutes, or until internal temperature reaches 163 degrees F. Transfer burgers to a platter and allow them to rest for 5 minutes before serving.
- While burgers rest, heat 1 tablespoon oil over medium high heat in a large saute pan (or wipe your grill pan with paper toweling and use that pan), and saute peppers and onion for 5 minutes, stirring occasionally, until peppers are softened and onions are translucent.
- Serve chicken fajita cheeseburgers on buns, topped with peppers, onions, and your favorite fajita fixings. Recommended: sour cream, salsa, and shredded lettuce.
