- 1 C whole wheat breadcrumbs (or regular)
- 1/2 C flour
- 1/2 tsp salt
- 1/4 tsp black pepper (freshly ground)
- 2 eggs (beaten)
- 1/4 C olive oil
- 6 oz mixed greens (arugula and spinach)
- 1/4 C extra virgin olive oil
- 1 lemon (zest and juice)
- 1 T fresh oregano (minced)
- 2 garlic cloves (minced)
- 1/2 tsp sugar
- Salt and pepper to taste.
