  • 1 C whole wheat breadcrumbs (or regular)
  • 1/2 C flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper (freshly ground)
  • 2 eggs (beaten)
  • 1/4 C olive oil
  • 6 oz mixed greens (arugula and spinach)
  • 1/4 C extra virgin olive oil
  • 1 lemon (zest and juice)
  • 1 T fresh oregano (minced)
  • 2 garlic cloves (minced)
  • 1/2 tsp sugar
  • Salt and pepper to taste.
