Ingredients

The following ingredients have 4 Servings
  • 1 pound fresh chicken chorizo sausage
  • 1/2 yellow onion, (diced)
  • 1 large red bell pepper, (diced)
  • 12 ounce bag frozen cauliflower gnocchi
  • 1/4 cup water
  • 1 cup baby spinach
  • Salt and pepper (to taste)

Instruction

  • In a large skillet over medium-high heat, brown and break up sausage. Once mostly cooked through, add onion and red bell pepper. Cook until softened, about 5-7 minutes.
  • Add the frozen cauliflower gnocchi to the skillet then add 1/4 cup of water. Cover and cook until gnocchi is softened.
  • Remove from heat and add the baby spinach. Toss. The residual heat will wilt the spinach. Season with salt and pepper, to taste.
