Ingredients

The following ingredients have 4 Servings
  • 8 chicken thighs
  • 2 eggs whisked
  • 1 cup plain flour
  • 1 pinch paprika
  • 1 pinch salt and pepper
  • 1 tsp onion powder
  • 1 tsp cayenne pepper
  • 1 splash olive oil
  • 2 new potatoes diced skin on
  • 1 cup pitted black olives
  • 1 chorizo sausage sliced
  • 4 red capsicums roasted sliced
  • 300 g canned Tomato Supreme
  • 300 ml water

Instruction

  • Heat oil in a large, non stick pan.
  • Mix paprika, salt, pepper, onion powder and a touch of cayenne pepper through the flour.
  • Egg wash the chicken and then coat in the spiced flour.
  • Sear chicken for a few minutes each side until browned. Remove from heat.
  • Put potatoes in the bottom of the slow cooker, followed by chicken, olives, chorizo and capsicum.
  • In a mixing jug, combine tomato supreme and water. Pour over the dish, cover and leave on low heat for 6 hours.
  • Serve with green beans and crusty bread.
