Ingredients
The following ingredients have 4 Servings
- 2.5-3 pounds boneless skinless chicken thighs
- 1 large can whole peeled tomatoes (approx 28 oz.)
- 1 sweet pepper (seeded and sliced)
- 2 small onions (peeled and sliced)
- 3 cloves of garlic (peeled and sliced)
- 1 tsp dried oregano
- 2 tsp dried parsley
- 1 tsp dried basil
- 1 tsp salt
Instruction
- Put all the ingredients into a crockpot.
- Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and at least 160 degrees. The chicken should fall apart. Add salt to taste.
- Serve with zucchini noodles or spaghetti squash.
