Ingredients

The following ingredients have 4 Servings
  • 2.5-3 pounds boneless skinless chicken thighs
  • 1 large can whole peeled tomatoes (approx 28 oz.)
  • 1 sweet pepper (seeded and sliced)
  • 2 small onions (peeled and sliced)
  • 3 cloves of garlic (peeled and sliced)
  • 1 tsp dried oregano
  • 2 tsp dried parsley
  • 1 tsp dried basil
  • 1 tsp salt

Instruction

  • Put all the ingredients into a crockpot. 
  • Cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and at least 160 degrees. The chicken should fall apart. Add salt to taste. 
  • Serve with zucchini noodles or spaghetti squash.
