Ingredients
The following ingredients have 4 Servings
- 4 chicken breasts (, boneless and skinless (I like Tyson prepackaged chicken breasts))
- kosher salt (, to taste)
- fresh ground pepper (, to taste)
- 3 tbl olive oil
- 6 oz goat cheese
- 1/4 cup sun-dried tomatoes (, chopped)
- 2 - 4 tbl fresh basil (, chopped)
- 4 tsp onions (, minced)
- 6 cloves garlic (, minced)
- 8 tbl butter (, divided)
- 6 tbl white wine
- juice of one lemon
Instruction
- Preheat oven to 350 degrees
- Brush chicken on both sides with olive oil and then sprinkle with salt and pepper.
- Place chicken on cooking sheet and bake 25 minutes or until no longer pink
- While chicken is cooking saute onion and garlic in 2 tbl butter over medium heat until soft
- Add white wine and lemon juice, reduce heat to medium-low and simmer 10 minutes, allowing sauce to reduce and thicken
- Add remaining 6 Tbsp butter, stirring frequently
- Add chopped sun-dried tomatoes (if using jarred in oil, rinse tomatoes first before adding to sauce) and basil, continue stirring
- Add salt and pepper to taste
- Top nearly-done chicken breasts with 2 oz each of the goat cheese and finishing cooking 2-3 minutes so that cheese can soften
- Remove from oven and spoon lemon butter sauce over chicken breasts and pile on the sun-dried tomatoes
- Serve immediately
