Ingredients

The following ingredients have 4 Servings
  • 4 skinless Chicken breasts
  • fresh Lime juice
  • 2 tsps ground paprika
  • cayenne pepper
  • 0.5 cup tomato Ketchup
  • 2 Avocados
  • 4 tomatoes (quartered)
  • 1 Red onion (chopped)
  • 1 green pepper (deseeded and chopped)
  • fresh Lime juice
  • 1 Tbsp fresh cilantro (chopped)
  • 2 Limes (quartered)

Instruction

  • Cut the chicken breasts into 4 cm/1 " cubes and mix with the lime juice, paprika, cayenne and ketchup. Season with salt and pepper and set aside to marinade for 3 hours.
  • Cut the avocados in half lengthways, remove the stone and peel off the skin. Chop the avocados and mix with the tomatoes, onion and green pepper.
  • Stir in the lime juice and coriander and season with salt and pepper.
  • Turn on the grill to medium heat. Thread the chicken pieces onto wooden skewers and grill for about 8 minutes, turning frequently.
  • Serve the chicken skewers with the salad, garnished with the lime quarters
