Ingredients

The following ingredients have 4 Servings
  • 1 tablespoon olive oil
  • 1 pound chicken breasts (cut into pieces)
  • 1 red bell pepper (diced)
  • 1 package ALEXIA Cauliflower Risotto
  • 1 head broccoli (cut into florets)
  • 1/2 cup water
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon fresh ground black pepper
  • Parmesan cheese and parsley (for garnish)

Instruction

  • Heat oil in a large skillet over medium high heat.
  • Add chicken, and cook until browned, about 8 minutes.
  • Add red pepper to the pan and cook for 3 more minutes.
  • Reduce heat to medium. Add cauliflower risotto, broccoli, water, salt and pepper to the pan. Cover. Cook for 8 minutes.
