Ingredients

The following ingredients have 4 Servings
  • 1 T olive oil
  • .5 lb boneless chicken breast (diced)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1 1/2 C chicken broth (or vegetable broth)
  • 1/2 C milk (whole)
  • 1 T butter
  • 1 C instant rice
  • 2 C broccoli florets
  • 1 C mozzarella cheese (shredded)

Instruction

  • Heat oil in a skillet over medium/high heat. Season chicken with salt, pepper and garlic powder. Add seasoned chicken to heated skillet. Cook until browned on all sides, stirring occasionally, about 8 minutes total.
  • Pour milk and broth into skillet. Bring just to a boil. Add butter and rice. Bring back up to just a boil, cover and reduce heat to low to simmer 5 minutes.
  • Meanwhile, place broccoli and 1/4 C water in a micro-steamer or other microwavable container with a cover that can be vented and cook 1 min 45 sec, just to steam. Drain water.
  • Stir broccoli into rice/chicken mixture. Stir in cheese. Cook 2 more minutes over low heat, uncovered. Enjoy
