Ingredients

The following ingredients have 8 Servings
  • 2.5 lbs chicken, cooked and diced (about 3 large chicken breast)
  • 1-pint cherry tomatoes halved
  • 5 oz. baby spinach
  • 3 oz. bacon bits (cooked and chopped or store bought)
  • 3 garlic cloves, minced
  • 1 tbs. Olive oil
  • 2 ¼ c. heavy cream
  • 2 c. parmesan cheese, finely grated
  • 1 lb. Three Cheese Tortellini
  • 5 leaves basil, finely chopped
  • Salt and pepper to taste

Instruction

  • Using a large saute pan and warm on medium heat. Add the olive oil and once warmed add the cherry tomatoes and cook until softened, about 3-5 minutes. Add the minced garlic and cook for an additional 3-5 minutes.
  • Add the heavy cream and parmesan cheese and stir until cheese has melted. Meanwhile, fill a large pot with salted water and bring to a boil. Add the tortellini and cook for 7-10 minutes. Drain the tortellini.
  • Carefully add the chicken, drained tortellini, and bacon to the sauce. Finally, carefully add the baby spinach and fold into pasta. Cover with lid to allow the spinach to wilt. Season with salt and pepper to taste. Sprinkle with chopped basil and serve.
  • NOTE: Feel free to add more cheese and a touch of cream if desired.
