Ingredients

The following ingredients have 2 Servings
  • 1/2 chicken breast fillet diced
  • 1/4 cup plain flour sifted
  • 1/4 tsp cayenne pepper
  • 1 tbs curry powder
  • 1/2 tsp mustard powder
  • 1/2 red capsicum diced
  • 1/2 carrot diced large peeled
  • 1/2 tsp coriander minced
  • 1 tbs olive oil
  • 1/2 cup cream
  • 1 pinch paprika *to taste
  • 1 pinch seasoning *to taste

Instruction

  • Heat some oil in a large pan.
  • Saute capsicum, carrot and coriander, and allow to brown a little.
  • In a large bowl, mix flour with cayenne pepper, curry and mustard.
  • Coat diced chicken with seasoned flour.
  • Add chicken to pan on medium heat, with cooked vegetables, and turn until browned.
  • Add cream and mix through.
  • Season with salt, paprika and pepper.
  • Turn heat to low and simmer for about 15 minutes.
  • Serve with steamed rice, garnished with a little extra paprika.
