Ingredients
The following ingredients have 2 Servings
- 1/2 chicken breast fillet diced
- 1/4 cup plain flour sifted
- 1/4 tsp cayenne pepper
- 1 tbs curry powder
- 1/2 tsp mustard powder
- 1/2 red capsicum diced
- 1/2 carrot diced large peeled
- 1/2 tsp coriander minced
- 1 tbs olive oil
- 1/2 cup cream
- 1 pinch paprika *to taste
- 1 pinch seasoning *to taste
Instruction
- Heat some oil in a large pan.
- Saute capsicum, carrot and coriander, and allow to brown a little.
- In a large bowl, mix flour with cayenne pepper, curry and mustard.
- Coat diced chicken with seasoned flour.
- Add chicken to pan on medium heat, with cooked vegetables, and turn until browned.
- Add cream and mix through.
- Season with salt, paprika and pepper.
- Turn heat to low and simmer for about 15 minutes.
- Serve with steamed rice, garnished with a little extra paprika.
