Ingredients

The following ingredients have 8 Servings
  • 1½ cup diced onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1½ pounds chicken thighs (boneless, skinless, diced)
  • 3 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 quart chicken or turkey stock
  • 2 cups water
  • 1½ cups pearl barley

Instruction

  • Place all ingredients into a 7-quart slow cooker.
  • Cover and cook on medium for 8 hours, or high for 5 hours.
  • Stir well and serve hot.
