Ingredients

The following ingredients have 4 Servings
  • 2 Large Chicken Breasts ( split into 2)
  • 1 Medium Potato (cubed)
  • 1 Cup Frozen Peas
  • 4 Slices Turkey Bacon (sliced)
  • 1 Cup Chicken Stock
  • 1/2 ts Olive Oil
  • Salt + Pepper to taste

Instruction

  • In a rimmed skillet, cook the bacon until it browns. Remove bacon and place on a plate.
  • Keep 1 tbs. of the bacon fat in the skillet
  • Brown chicken breasts in bacon fat on both sides. Remove from heat
  • Add potatoes to the skillet and let them brown.
  • Add the chicken back in the skillet and the chicken stock.
  • Let the mixture simmer until the sauce thickens up. About 10 minutes
  • Add the peas and let them cook in the sauce for 1-2 minutes
  • Remove from heat and place on a platter. Sprinkle the crispy bacon on top
  • Enjoy!
