Ingredients
The following ingredients have 4 Servings
- 2 cups Romaine lettuce
- 1 cup arugula
- 1 cup baby spinach
- 1 avocado
- 1/2 English cucumber
- 1 cup cherry tomatoes
- 1 cup mango
- 1/2 cup red onion (chopped)
- 4 chicken thighs ( skinless and boneless)
- 1 lime zest (from one lime)
- 3 tbsp fresh lime juice (approx two limes)
- 3 tbsp olive oil
- 4 cloves garlic (crushed)
- 2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 3 tablespoons olive oil
- 2 tbsp fresh lime juice (approx 1 lime)
- 2 tsp honey
- 1/2 tsp salt
- 1/8th tsp cayenne pepper
Instruction
- Mix together the grilled chicken marinade and pour over the chicken. Marinate for 1 hour.
- Cook the chicken on a grill or in a cast iron grill pan with a little oil on a medium heat until it's cooked all the way through.
- To make the honey lime dressing mix all the ingredients together to combine. taste and adjust the seasonings and honey if you need to.
- Assemble your chicken avocado salad by adding the romaine lettuce, arugula, baby spinach, grilled chicken, avocado, cucumber, cherry tomatoes, mango and red onion into a large bowl. Add as much salad dressing as you like, then toss salad.
