Ingredients

The following ingredients have 10 Servings
  • 1 tbsp olive oil
  • 1 onion (diced)
  • 1 cups carrots (sliced)
  • 3 stalks celery (sliced)
  • 1 tbsp minced garlic
  • 2 tbsps fresh sage (minced)
  • 2 tbsps dried parsley
  • 1 tsp paprika
  • 1 tsp pepper
  • 12 cups chicken broth
  • 3/4 cup wild rice
  • 2 cooked chicken breasts (chopped)
  • 1 tsp sea salt

Instruction

  • In a large pot heat the olive oil over medium heat and add the onion, carrots, and celery. Saute for 2-3 minutes.
  • Add the garlic, sage, parsley, paprika, and pepper and stir until fragrant (another minute or so).
  • Pour in the chicken broth, wild rice, and chopped chicken. Bring to a boil, cover, and simmer on low for 40 minutes.
  • Season with salt (and pepper) to taste.
