Ingredients
The following ingredients have 4 Servings
- 8.5 oz whole-grain rice (uncooked)
- 1 tbsp sesame oil
- 2 eggs (lightly beaten)
- 1 tbsp garlic (minced)
- 1/2 cup red onion (thinly sliced)
- 2 cups cooked rotisserie chicken (shredded)
- 2 cups chopped broccoli and cauliflower
- 8 oz water chestnuts (drained)
Instruction
- Prepare rice according to the package
- In a large wok or skillet, heat 1/2 tbsp sesame oil over medium heat
- Quickly soft scramble the eggs
- Remove and set aside
- Add remaining oil to skillet and heat
- Add garlic and onions and stir-fry for 2 minutes
- Add chicken and vegetables and stir-fry for 2 minutes or until heated through
- Fold in rice and eggs
- Garnish with soy sauce if desired
