Ingredients

The following ingredients have 4 Servings
  • 8.5 oz whole-grain rice (uncooked)
  • 1 tbsp sesame oil
  • 2 eggs (lightly beaten)
  • 1 tbsp garlic (minced)
  • 1/2 cup red onion (thinly sliced)
  • 2 cups cooked rotisserie chicken (shredded)
  • 2 cups chopped broccoli and cauliflower
  • 8 oz water chestnuts (drained)

Instruction

  • Prepare rice according to the package
  • In a large wok or skillet, heat 1/2 tbsp sesame oil over medium heat
  • Quickly soft scramble the eggs
  • Remove and set aside
  • Add remaining oil to skillet and heat
  • Add garlic and onions and stir-fry for 2 minutes
  • Add chicken and vegetables and stir-fry for 2 minutes or until heated through
  • Fold in rice and eggs
  • Garnish with soy sauce if desired
