Ingredients

The following ingredients have 4 Servings
  • 1 tbs soy sauce,
  • 1 tbs caster sugar
  • 1 tbs cornflour
  • 400g chicken breast fillets, cut into 2cm cubes
  • 2 tbs sunflower oil
  • 2 tbs hoi sin sauce
  • 2 tbs chicken stock
  • 1 cup snow peas, sliced on an angle
  • Steamed rice, to serve
  • Toasted sesame seeds, to sprinkle

Instruction

  • Combine the soy sauce, sugar and cornflour in a bowl, add the chicken and toss to combine. Leave to marinate in the fridge for 30 minutes.
  • Heat the oil in a wok over high heat. Remove the chicken from the marinade, then stir-fry in 2 batches for 3-4 minutes until golden and almost cooked. Return all the chicken to the wok with the hoi sin sauce, stock or water and snow peas. Stir-fry for a further minute until chicken is cooked through and snow peas are just tender. Serve immediately on rice, garnished with sesame seeds.
