Ingredients

The following ingredients have 5 Servings
  • 6 - boneless chicken thighs or wings
  • 1 c - apple cider vinegar
  • 1 bottle - ginger ale or beer your choice
  • 1/2 c - brown sugar, lightly packed
  • 1/2 c - smoked or regular salt
  • - water to cover
  • Heavy Dash - onion powder
  • Heavy Dash - garlic powder
  • Heavy - black pepper
  • POTATO WAFFLES
  • 2 c - mashed potatoes
  • 1 c - self-rising flour
  • 1 - egg
  • 3/4 c - milk
  • 2 - green onions, chopped tops and bottoms
  • SEASON FLOUR FOR CHICKEN
  • 2 c - all-purpose flour
  • 1/2 c - cornmeal
  • Dash - smoke salt
  • Heavy dash - black pepper
  • Dash - onion powder
  • Dash - garlic powder

Instruction

  • Mix all ingredients for chicken together and place chicken in brine for at least 2 hours.
  • Mix season flour ingredients together in a bag and drop chicken pieces in. Shake and let sit while oil is heating up.
  • Heat oil in cast iron skillet to 350 and fry chicken 5-6 min per side till golden brown; set on wire rack to drain.
  • Mix all ingredients for waffles together and drop on waffle iron with ice cream scoop; cook until browned.
  • Serve with gravy made from chicken drippings.
