Ingredients
The following ingredients have 5 Servings
- 6 - boneless chicken thighs or wings
- 1 c - apple cider vinegar
- 1 bottle - ginger ale or beer your choice
- 1/2 c - brown sugar, lightly packed
- 1/2 c - smoked or regular salt
- - water to cover
- Heavy Dash - onion powder
- Heavy Dash - garlic powder
- Heavy - black pepper
- POTATO WAFFLES
- 2 c - mashed potatoes
- 1 c - self-rising flour
- 1 - egg
- 3/4 c - milk
- 2 - green onions, chopped tops and bottoms
- SEASON FLOUR FOR CHICKEN
- 2 c - all-purpose flour
- 1/2 c - cornmeal
- Dash - smoke salt
- Heavy dash - black pepper
- Dash - onion powder
- Dash - garlic powder
Instruction
- Mix all ingredients for chicken together and place chicken in brine for at least 2 hours.
- Mix season flour ingredients together in a bag and drop chicken pieces in. Shake and let sit while oil is heating up.
- Heat oil in cast iron skillet to 350 and fry chicken 5-6 min per side till golden brown; set on wire rack to drain.
- Mix all ingredients for waffles together and drop on waffle iron with ice cream scoop; cook until browned.
- Serve with gravy made from chicken drippings.
