Ingredients

The following ingredients have 4 Servings
  • 4 Chicken breasts (5 oz each)
  • 3 Nectarine
  • 3 scallions
  • salt
  • freshly ground peppers
  • 2 Tbsps olive oil
  • 4 Tbsps melted honey
  • Baby spinach (for garnishing)

Instruction

  • Rinse the chicken breasts and pat dry. Cube.
  • Halve and remove the pits from the nectarines. Slice into wedges.
  • Remove the roots and ragged tops from the spring onions. Using the entire onion, slice on the diagonal into 1.5" pieces.
  • Thread the skewers through the chicken, onions and nectarines. Brush with the oil and season with salt and pepper. Place on a hot grill.
  • Grill and turn frequently for 6-8 minutes. Baste with the melted honey during the last few minutes of grilling time.
  • Rinse the spinach leaves and shake off any excess water. Arrange the leaves on the plates.
  • Place the skewers on top. Serve.
