Ingredients

The following ingredients have 4 Servings
  • 1 pound chicken cut into thin slices
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon oil canola (vegetable or peanut oil)
  • salt & pepper to taste
  • 4 cloves garlic minced
  • 1/2 teaspoon ginger minced or finely grated
  • 1/2 pound mushroom cut into thin slices
  • 2 tablespoon scallions use both white & green parts; cut into 2-inch pieces
  • Stir-fry Sauce:
  • 2 tablespoon soy sauce
  • 2 tablespoon rice wine
  • 1 teaspoon cornstarch
  • 1 teaspoon brown sugar
  • Oil for cooking (canola, vegetable or peanut oil)

Instruction

  • In bowl, combine the ingredients for the sauce – soy sauce, rice wine, cornstarch, and sugar.
  • In a large pan on medium-high heat,Add 1 tablespoon of oil to the pan, Once the oil is hot.add the sauté garlic and ginger until fragrant. add chicken, season with salt, pepper and the sauce . and sauté until cooked through and browned.
  • add a little bit of oil ,add the mushrooms and stir until heated through.about 3-5 minutes.
  • Add the scallions and give it another 30 seconds, Serve right away.
