Ingredients

The following ingredients have 4 Servings
  • 3 tbsp olive oil
  • 1 1/2 lbs chicken breasts, cut into 1 inch pieces
  • 1 cup sweet onion, diced
  • 4 garlic cloves, minced
  • 1 cup farro, uncooked
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes
  • 2 large broccoli heads, chopped
  • 2 1/2 cups low-sodium chicken stock
  • 2 cups sharp cheddar cheese, shredded
  • salt and pepper to taste

Instruction

  • Heat 2 tbsp olive oil over medium-high heat in a large skillet. Season chicken with salt and pepper and add to skillet with the onion. Cook for 4-5 minutes, or until the chicken is browned. Stir in garlic for another minute.
  • Push chicken and onion to the side and add remaining tbsp olive oil. Add farro, thyme and crushed red pepper flakes and saute for 2 minutes.
  • Add chicken stock, stirring everything together and bring to simmer. Reduce heat, cover and cook for 30-35 minutes, or until farro is cooked.
  • Add the broccoli and half of the cheese and stir until everything is combined. Cook for 2 minutes.
  • Top with remaining cheese and place under broiler for 1-2 minutes, or until the cheese is brown and bubbly. Top with some parsley.
