Ingredients
The following ingredients have 4 Servings
- 3 tbsp olive oil
- 1 1/2 lbs chicken breasts, cut into 1 inch pieces
- 1 cup sweet onion, diced
- 4 garlic cloves, minced
- 1 cup farro, uncooked
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes
- 2 large broccoli heads, chopped
- 2 1/2 cups low-sodium chicken stock
- 2 cups sharp cheddar cheese, shredded
- salt and pepper to taste
Instruction
- Heat 2 tbsp olive oil over medium-high heat in a large skillet. Season chicken with salt and pepper and add to skillet with the onion. Cook for 4-5 minutes, or until the chicken is browned. Stir in garlic for another minute.
- Push chicken and onion to the side and add remaining tbsp olive oil. Add farro, thyme and crushed red pepper flakes and saute for 2 minutes.
- Add chicken stock, stirring everything together and bring to simmer. Reduce heat, cover and cook for 30-35 minutes, or until farro is cooked.
- Add the broccoli and half of the cheese and stir until everything is combined. Cook for 2 minutes.
- Top with remaining cheese and place under broiler for 1-2 minutes, or until the cheese is brown and bubbly. Top with some parsley.
