Ingredients

The following ingredients have 4 Servings
  • 2 skinless cooked chicken breasts, cut into chunks
  • 1 avocado, peeled, stoned and cut into chunks
  • 16 baby plum tomatoes, halved
  • 1/2 cucumber, cut into chunks
  • 12 radishes, quartered
  • 1 romaine lettuce, chopped
  • 1/2 red onion, diced
  • 1/2 clove garlic, crushed
  • 1 tsp Dijon mustard
  • 2 tbsp white wine vinegar
  • 1/2 tsp caster sugar
  • 4 tbsp olive oil

Instruction

  • Put the garlic, mustard, vinegar and sugar in a bowl and whisk together, then gradually whisk in the olive oil and 1 tbsp of water. Season well.
  • Put the remaining ingredients in a large bowl or on a platter, then drizzle over the dressing and gently toss.
