Ingredients
The following ingredients have 3 Servings
- 200 gm Pumpkin (chopped to small cubes from )
- 4 tsp Chia seeds
- 8 Almonds (Soaked and peeled )
- 2 tbsp Onions (Finely chopped )
- 1 pinch Nutmeg (Freshly ground )
- 1 tsp Black pepper (Freshly ground )
- 3 cup Vegetable stock
- Salt ( to taste)
- 200 ml Coconut milk (Thick )
- 2 tsp Olive oil
Instruction
- Soak Chia seeds in 150 ml of water, keep aside.
- In a heavy bottomed pan heat olive oil and fry the onions for few seconds.
- Then add the nutmeg powder , almonds and pumpkin pieces, give few stirs.
- Pour a cup of water with required salt and black pepper powder.
- Simmer the stove and close the pan with a lid.
- After few minutes the veggies become soft and switch off the stove.
- Put them in a blender and make a soft paste out of it.
- Add the vegetable stock to the paste and mix well and again heat the stuff in a pan.
- Once they begin to boil well and the soaked Chia seeds to the pan and mix well.
- When the soup begins to thicken switch off the stove.
- Add the coconut milk.
- Serve hot garnishing with coriander leaves or mint leaves.
