Ingredients
The following ingredients have 4 Servings
- 150 g dark chocolate (broken into pieces)
- 1/4 cup butter (50 g, cut into cubes)
- 1/2 cup all purpose flour (50 g)
- 1/4 tsp baking powder
- 2 eggs
- 1 cup caster sugar (250 g)
- 1 tsp vanilla extract
- 100 g dark chocolate (chopped)
- 340 g bag of smarties
Instruction
- Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius) and line a baking tray with baking paper.
- Melt the chocolate pieces and butter in the microwave or in a saucepan on the stove top, and allow to cool.
- With an electric mixer, beat together the eggs, sugar and vanilla essence until thick and pale.
- Pour the melted chocolate into the beaten eggs and sugar and stir through.
- Sift in the flour and baking powder, and stir through before adding the chopped chocolate and mix until well combined.
- Using an ice cream scoop, scoop the mixture onto the lined baking trays. Without flattening the mixture too much, press smarties into the top of the cookies.
- Bake in the oven for 8 to 10 minutes and cool on the tray before transferring to a cooling rack. Note: If you put the cookies onto the cooling rack while hot they will become marked by the wires from the rack.
