Ingredients

The following ingredients have 12 Servings
  • 200 gms – 1 ½ cups icing sugar
  • 100 gms – ½ cup butter
  • 6 egg whites
  • 75 gms – ½ cup almond meal
  • 75 gms – ½ cup flour
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • 500 gms – 1.1 lbs. cherries (pitted and chopped)
  • Almond slivers

Instruction

  • Put the butter in a saucepan and melt it until brown and fragrant. Don’t burn it though or it will turn bitter!
  • Remove the saucepan from the fire and put it in cold water to cool it down fast.
  • In a bowl, sift together the flour, almond meal, baking powder and icing sugar. Mix well.
  • Slowly add the egg whites and stir well.
  • Add the melted butter and vanilla extract and mix well.
  • Add the cherries and mix to incorporate.
  • Cover the bowl with cling wrap and refrigerate it for at least 6 hours.
  • Divide the batter into the financiers molds (fill them up to 3/4).
  • Bake in a pre-heated oven at 200°C – 390°F for 10 to 15 minutes. When ready, let them cool down, then unmould them and transfer to a wire rack to cool down completely.
  • Decorate with almond slivers and serve.
