Ingredients
The following ingredients have 12 Servings
- 200 gms – 1 ½ cups icing sugar
- 100 gms – ½ cup butter
- 6 egg whites
- 75 gms – ½ cup almond meal
- 75 gms – ½ cup flour
- ½ tsp baking powder
- 1 tsp vanilla extract
- 500 gms – 1.1 lbs. cherries (pitted and chopped)
- Almond slivers
Instruction
- Put the butter in a saucepan and melt it until brown and fragrant. Don’t burn it though or it will turn bitter!
- Remove the saucepan from the fire and put it in cold water to cool it down fast.
- In a bowl, sift together the flour, almond meal, baking powder and icing sugar. Mix well.
- Slowly add the egg whites and stir well.
- Add the melted butter and vanilla extract and mix well.
- Add the cherries and mix to incorporate.
- Cover the bowl with cling wrap and refrigerate it for at least 6 hours.
- Divide the batter into the financiers molds (fill them up to 3/4).
- Bake in a pre-heated oven at 200°C – 390°F for 10 to 15 minutes. When ready, let them cool down, then unmould them and transfer to a wire rack to cool down completely.
- Decorate with almond slivers and serve.
