Ingredients

The following ingredients have 4 Servings
  • 1/2 c butter, room temp
  • 1/2 c sugar
  • 2 large eggs
  • 3/4 c buttermilk + 1 Tbs
  • 1/4 tsp almond extract
  • 2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 c chopped cherries (fresh or dried)
  • 3 oz chocolate, finely chopped
  • sliced almonds, optional

Instruction

  • Preheat oven to 375 degrees F. Fill 1 dozen muffin tins with liners, or grease well.
  • Beat butter and sugar until fluffy. Add eggs, one at a time, mixing well.
  • Add buttermilk and almond extract.
  • Seperately, combine flour, baking powder, and baking soda. Add flour mixture, cherries, and chocolate to liquids, gently stirring until just combined.
  • Fill 1 dozen muffin cups. Sprinkle tops of muffins with sliced almonds. Bake 15-22 minutes. 18 minutes was the magic number for me.
