Ingredients

The following ingredients have 10 Servings
  • 5 medium zucchini, (diced)
  • 2 Tbsp all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ cup milk
  • 4 eggs
  • 1 (4-oz) can chopped green chiles
  • 4 cups Monterey Jack cheese

Instruction

  • Preheat oven to 325ºF. Lightly spray a 9x13-inch pan with cooking spray. Set aside.
  • In a large saucepan, cook zucchini in boiling water for 4 minutes; drain and cool for 10 minutes.
  • In a large bowl, combine flour, baking powder and salt. Whisk in milk until smooth. Whisk in eggs, beating well. Stir in green chiles, zucchini and cheese.
  • Pour mixture into prepared pan. Bake uncovered for 40 to 50 minutes, until toothpick comes out clean.
