Ingredients
The following ingredients have 4 Servings
- 2 cups shredded cheddar
- 1 pound ground beef
- 2 cloves chopped garlic
- 1/4 red onion, chopped
- 2 tbsp taco seasoning
- 3 tbsp TABASCO® Sauce
- 3/4 cup salsa
- 2 avocados
- 1 roma tomato, diced
- 1/4 cup diced onion
- 1/2 lime, juiced
- 1 tsp salt
Instruction
- Preheat your oven to 375 degrees.
- Line a cookie sheet with parchment paper.
- Scoop tablespoons of shredded cheese onto the parchment paper, leaving a few inches between each scoop.
- Place the cookie sheet in the oven for 6-7 minutes or until the edges of the cheese have turned brown.
- While the cheese is melting, spray the bottom part of a mini muffin tin with cooking spray.
- After the cheese has melted, remove it from the oven and use a spatula to remove it from the parchment paper. Drape each circle of melted cheese over the bottom of a muffin tin.
- Heat olive oil in a large pan and brown the chopped onions and garlic. Then add the ground beef, and break up into crumbles while it cooks. Drain the grease from the pan.
- Add taco seasoning and TABASCO® Sauce to the ground beef.
- To make the guacamole, scoop the Avocados from Mexico into a bowl and mash them with a fork. Add the tomatoes, onions, garlic, salt and lime to the bowl.
- Mix to create the guacamole.
- To assemble the cheese cups, scoop some of the TABASCO® Sauce seasoned ground beef into the cheese cups and top with salsa and guacamole.
