Ingredients

The following ingredients have 4 Servings
  • 1 pound petite red potatoes
  • olive oil, kosher salt, pepper, crushed red pepper flakes
  • 1 cup shredded italian blend cheese
  • fresh thyme

Instruction

  • Fill a saucepan with water, bring to a boil, salt the water with kosher salt and add potatoes. Boil for 12 minutes (if they are regular size potatoes and not petite, boil for 18 minutes).
  • Drain potatoes and place on a lined baking sheet. Smash with a cup or mason jar. Drizzle each potato with olive oil and sprinkle with kosher salt, pepper, and crushed red pepper flakes (if you like a little heat).
  • Bake in a 450 degree oven for 15-18 minutes. Remove from oven, add cheese and fresh thyme and bake for an additional 2 minutes.
