Ingredients
The following ingredients have 4 Servings
- 2 pounds redskin potatoes
- 1 packet dry ranch seasoning
- kosher salt, pepper
- 6 oz ranch dressing
- 2 cups shredded cheese (cheddar or colby jack)
Instruction
- Dice potatoes into small pieces. Place in a 9x13 baking dish.
- Sprinkle the dry ranch seasoning, kosher salt, and pepper on the potatoes and toss to coat evenly. Pour the ranch dressing on top and toss again to coat evenly.
- Cover with foil and bake for 45 minutes in a 425 degree oven. Stir every 15 minutes. (Taste to make sure they are fully cooked, depending on the size of the pieces, it may require more baking time)
- Remove foil, add 1 cup of the cheese and mix into the potatoes. Sprinkle the other cup of cheese over top. Bake 5 additional minutes or until cheese is melted.
