Ingredients

The following ingredients have 4 Servings
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • 2 spring onions ((scallions) finely sliced)
  • 180 g quinoa (rinsed)
  • 10 cherry tomatoes (halved)
  • 1 small cheese rind (I used Grana Padano)
  • 475 ml chicken stock
  • 50 g shredded Grana Padano
  • Handful of chopped parsley
  • 4 slices of Prosciutto di San Daniele torn into bits

Instruction

  • Heat the olive oil in a pot over medium heat.
  • Add the spring onions and garlic and cook, for 1 minute.
  • The add in the quinoa, tomatoes, cheese rind and chicken stock, stir well and cover.
  • Bring to the boil, reduce to a simmer, cover and let cook for 15 mins.
  • Switch off the heat and stir in the grated cheese and parsley.
  • Top with the torn ham and serve.
