Ingredients
The following ingredients have 4 Servings
- 1 tbsp olive oil
- 1 garlic clove (minced)
- 2 spring onions ((scallions) finely sliced)
- 180 g quinoa (rinsed)
- 10 cherry tomatoes (halved)
- 1 small cheese rind (I used Grana Padano)
- 475 ml chicken stock
- 50 g shredded Grana Padano
- Handful of chopped parsley
- 4 slices of Prosciutto di San Daniele torn into bits
Instruction
- Heat the olive oil in a pot over medium heat.
- Add the spring onions and garlic and cook, for 1 minute.
- The add in the quinoa, tomatoes, cheese rind and chicken stock, stir well and cover.
- Bring to the boil, reduce to a simmer, cover and let cook for 15 mins.
- Switch off the heat and stir in the grated cheese and parsley.
- Top with the torn ham and serve.
