Ingredients
The following ingredients have 8 Servings
- 6 cups potatoes (peeled and cubed)
- 1/2 cup onion (diced)
- 32 oz container chicken broth
- 1 cup water
- 3 Tablespoons all-purpose flour
- salt and pepper to taste
- 1 cup milk
- 8 oz pkg shredded Cheddar cheese
- Garnish: sliced green onions and 1/4 lb bacon (cooked until crispy and crumbled)
Instruction
- Pour your chicken broth and water in a large pot and bring to a boil over high heat
- Add your peeled and cubed potatoes and diced onion to your boiling liquids
- Boil, uncovered for 8 minutes until your potatoes are just fork tender
- While your potatoes and onions are boiling, fry up your bacon
- Once your potatoes are just fork tender, lower to medium heat and mix together your flour, salt, pepper and milk and pour it in with your potatoes
- Stir your soup occasionally and heat for approximately 5 minutes, until it has thickened up
- When the soup has thickened, add your cheese and stir together until the cheese melts
- Garnish with bacon and green onions
