Ingredients

The following ingredients have 4 Servings
  • 1 1/2 pounds lean ground beef
  • 8 ounces shredded cheddar cheese, (divided)
  • 2 large eggs
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped scallions
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper

Instruction

  • Preheat the oven to 375 degrees F.
  • Add all of the ingredients to a bowl, reserving 1/4 cup of the cheese. Mix well, then form into a rectangular loaf and place in an oven safe baking dish. 
  • Bake for approximately 40-45 minutes; then sprinkle the remaining cheese on top.
  • Place the meatloaf back in the oven for another 10-15 minutes until the meatloaf is cooked through and the cheese has melted. (Cooking times may vary slightly depending on your preference.)
