Ingredients
The following ingredients have 4 Servings
- 4 cups cooked chicken shredded
- 40 g Old El Paso fajita spice mix
- 4 spring onions thinly sliced
- 225 g Old El Paso smoky chipotle fajita cooking sauce
- 4 cups mozzarella grated
- 1 packet Old El Paso regular tortillas
- 1 olive oil spray
- 1/3 cup sour cream
- 1 tbs lime juice
- 1 handful coriander leaves fresh *to serve
Instruction
- Combine chicken, fajita spice mix, onion, 1/4 cup of the smoky chipotle cooking sauce and 2/3 cup of the mozzarella in a bowl.
- Divide mixture among 8 tortillas. Top each with 1/3 cup of the remaining cheese and remaining tortillas. Spray tops with oil.
- Heat a medium, non-stick frying pan over medium heat. Sprinkle pan with 1 tablespoon of the remaining cheese. Place one quesadilla in pan, oiled-side down. Spray top with oil. Cook for 2 minutes or until cheese is golden. Carefully, but swiftly, turn over quesadilla. Cook for 1 minute or until golden. Repeat with remaining cheese and quesadillas.
- Meanwhile, place sour cream and remaining smoky chipotle cooking sauce in a small saucepan over medium heat. Stir until smooth and heated through. Stir in lime juice.
- Cut quesadillas into wedges. Sprinkle with coriander leaves and serve with smoky chipotle cooking sauce.
