Ingredients
The following ingredients have 16 Servings
- 2 heads cauliflower (or 16 cups cauliflower florets)
- 1 green pepper (seeded and diced)
- 1 1/2 cups Panko bread crumbs (divided)
- 1 cup ranch dressing
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 2 tsp salt
- 1/2 cup shredded Parmesan cheese
Instruction
- Place cauliflower florets into a stock pot along with 1 cup water.
- Bring to a boil, then reduce heat and simmer 7-9 minutes or until just tender.
- Drain cauliflower and place into a large mixing bowl.
- Add in green pepper, 1 cup bread crumbs, salt, sour cream, ranch dressing, and cheddar.
- Stir to combine well.
- Transfer to a greased 9 x 13 baking dish.
- Sprinkle Parmesan cheese and remaining 1/2 cup Panko bread crumbs evenly over top of casserole.
- Bake at 325 degrees for 30 minutes.
- Turn off oven and turn on broiler.
- Broil for 2-4 minutes until topping is browned, turning casserole dish in the oven as needed to brown evenly and being careful it doesn't burn.
- Remove from oven and allow to rest 10 minutes before serving.
